I make this ALL THE TIME. I love to make it for breakfast when we have a guest saying at our house. It’s great with some bacon on the side, which makes for a great sweet and savory breakfast. This is such a satisfying, comforting dish. Something different to make for breakfast, or just make it for dessert.
I want to note that this is MY version of my mom’s apple crisp. My mom made this as a dessert to bring for a Christmas family gathering at my cousin’s house. Later my mom mentioned that it didn’t have sugar I’m it and I was shocked. She said she forgot to put the sugar in the apples. So I immediately asked her for the recipe. I have tweaked it, because there is some sugar in it. I now make it without sugar in the apples because it tasted fine the way she made it. I cut the sugar and butter down in the topping by a lot and don’t put any butter in the apples like her original recipe called for. I also use whole wheat, unlike my mom and I double the oatmeal. I hope you enjoy this as much as I do.
Apple crisp:
- 10 apples
- 1 cup of frozen blueberries or whatever fruit you want to add, rhubarb could be nice (optional)
- 1 tsp cinnamon
- dash nutmeg
- dash honey or pure maple (optional)
- dash of salt
- 1 teaspoon vanilla
- 1 lemon squeezed
Sprinkle enough whole wheat flour her everything to coat when tossing. Mix this all together and put into whatever beautiful baking dish you choose. Make sure there is room for the topping.
Topping:
- 1.5 cup oatmeal
- 1.5 cup whole wheat flour
- 1 stick cold butter, cut into cubes
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 3/4-1 cup coconut sugar- depending on how sweet you like things
Mix the dry together and then cut up pieces of butter and drop them into the dry mixture. As I drop in the butter I cover the pieces with the dry mixture so they don’t all stick and clump together, but do whatever is easiest for you. Then once all the butter is in you can use a fork or pastry blender to cut the butter into the dry mixture until it is crumbly. Or you can do it the lazy, weird way like I do. I actually get in there with my bare hands and mxi it all together. When it is all incorporated it will look like loose, somewhat dry crumbles. It will clump together when you squeeze it in your hand and hold it’s form when you let go, but will easily crumble apart.
Take handfuls or spoonfuls and lay it over the top of the apple berry mixture. Bake in a 350 degree oven about an hour. Let cool slightly before serving.
Tastes even better the next day and does great warmed up. I actually made this last night and put it in the refrigerator for breakfast this morning.
